Bubble and Squeak!

This month's Harvest of the Month is cabbage. Instead of trying the cabbage in its raw form, we decided to make the traditional English dish, Bubble & Squeak. For the most part, it was a huge hit and students demanded the recipe. You can find it HERE.

Smoothie Thursday!


  • ·        Students can sign up for smoothies in their classroom.
  • ·        On Thursday mornings students will come to the cafeteria to pick one up to take to the classroom for breakfast or snack. Kindergarten and preschool smoothies will be delivered to their classrooms.
  • ·        16oz fruit and yogurt smoothies with a whole grain are a quick, delicious, nutritious start to the day and a great pick me up snack!
  • ·        For the same cost as a regular breakfast or snack bag!  $1.75 students/ $2.00 adults
  • ·        Served in our new reusable RES Cougar Cups!


  • February 19th's smoothie flavor is:
    Blueberry-Vanilla
    Wild Maine blueberries, Monument Farms milk, Cabot yogurt, Slopeside maple syrup, and vanilla

    Served with a whole grain breakfast snack

RES Cafe Love!


Last week RES students celebrated their 100th day of school by thinking about all of the things they love about RES.  Not surprisingly, many students and classes noted their love and appreciation for the RES Cafe and all of the wonderful things that happen there. Parsnips, New Lunch Trays, and Local Soup!


PARSNIPS!

A lot has been happening at RES, both in our cafeteria and with Farm to School. Last week every student, Pre-Kindergarten to 4th grade, had the chance to participate in Farm to School's monthly taste test. In January we tasted parsnips in the form of parsnip chips. After students tried the parsnip chips, they then had the opportunity to vote on how they felt about the taste. Here are the results from the last taste test.

Also, here is a recipe for oven-baked root vegetable chips. Bon appetit!








NEW LUNCH TRAYS!

In June, 2014 Richmond Elementary School was awarded the HUSSC Bronze Medal Award. We have just received the award and were able to purchase new school lunch trays with the award money. Here are our new lunch trays in one of our school colors, purple. They really liven up the lunch room!





LOCAL SOUP DAY!

It may be February, it may be below zero outside, but we are eating farm fresh foods from our local farmers! Potatoes, beets, onions, celeriac, carrots and sweet corn! Pickled Beets and Corn Chowder are on the school menu! YUMMY!

Vermont Department of Health School Wellness Award 2014 Report



Richmond Elementary School began a Smoothie for Breakfast and Snack program called Smoothie Thursdays. Every Thursday we serve fresh, made from scratch smoothies using local ingredients as much as possible. Our breakfast sales increase on that day from 65 to 165! Each smoothie comes with a wholegrain treat which makes it a reimbursable, healthy meal!  The wellness award has helped us achieve this goal by providing us with healthier stainless steel cookware for preparing the smoothies and other snack items as well as increasing our healthy ala carte soup sales at lunch.

RES Scholars love popcorn which is a natural, healthy whole grain snack! With some of the award money we purchased a popcorn machine so we can serve popcorn with smoothies for a delicious snack. The popcorn machine has been a tremendous addition to our school in many ways! Classrooms now use it for celebrations, reducing the consumption of sugary treats. It has also been used for our school wide PBIS reward day and for a family movie night. Eating delicious popcorn as a treat is a popular new trend at RES!

Happy Groundhog Day!



Today we celebrated Groundhog Day with chocolate cake made with beets!  Each cake had a groundhog and shadow.

We substituted King Arthur White Whole Wheat Flour and used oil in place of the butter. Gluten Free flour made nice tender gluten free cakes.
